NATIVE AMERICAN MEAL ON LOVELY LATE SUMMER DAY!


IF YOU ARE FORTUNATE ENOUGH TO HAVE FRESH VEGIES, ALL THE BETTER.  IF NOT STORE BOUGHT WILL DO.  AS A CHILD I LOVED THIS DISH AND WAS SO THRILLED WHEN MY FATHER BROUGHT IN THE GARDEN DELIGHTS.  THIS DISH IS FOR  MORNING, NOON, OR NIGHT.  IT IS ALSO A GREAT THANKSGIVING MEAL.  YOU CAN PREPARE THIS AND FREEZE FOR THE BIG DAY.  IT FREEZES VERY WELL.  THE AMOUNTS BELOW DEPEND ON HOW MUCH YOU WANT TO MAKE.  YOU CAN LEAVE OUT CORN OR YELLOW SQUASH IF YOU WISH. 

FOUR CORN ON COBS
FOUR TOMATOS
ONE LARGE SWEET ONION
TWO ZUCCINNI
YELLOW SQUASH

A BIT OF OLIVE OIL IN SKILLET.  CUT THE CORN OFF THE COB INTO A SKILLET.  ADD THE DICED TOMOTOS WITH CHOPPED ONION.  SLICE THE ZUCCINNI AND YELLOW SQUASH THIN.  SAUTEE UNTIL VEGIES ARE AS TENDER AS YOU LIKE THEM.  ADD SOME SALT AS IS YOUR TASTE. 

ENJOY THIS GARDEN DELIGHT AND BE HEALTHIER FOR IT TOO. 

IF YOU WANT THIS DISH TO BE MORE DIET LIKE, LESS CARBS AND SUGARS  .... LEAVE THE CORN OUT AND IT IS STILL DELICIOUS. 

JUST THINK HOW BLESSED WE ARE HERE IN AMERICA AND CANADA TO HAVE SUCH WONDERFUL INDIGENOUS PRODUCE.  REJOICE IN OUR NATIONS' GREAT BOUNTY.
